Mediterranean quiche Recipe

INGREDIENTS

2 pie crusts (store bought or homemade)
2 tablespoons clarified butter
1 onion, medium diced
1 medium zucchini, medium diced
1 red pepper, medium diced
1-2 cloves garlic, minced
4 ounces oil-packed sun-dried tomatoes, drained and chopped
2 ounces (about 1 cup) fresh basil, leaves only
2 teaspoons fresh thyme, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 large eggs
1-1/4 cups half-and-half
1-1/2 cups grated gruyère
1/2 teaspoon crushed red pepper
4 ounces goat cheese, crumbled

DIRECTIONS

  1. Preheat oven to 375ºF. Put pie crusts in pie tins if necessary and place them on a rimmed baking sheet.
  2. In a large skillet, melt butter over medium-high heat. Add onions and cook, stirring occasionally until caramelized, about 6 minutes. Add zucchini and cook until zucchini is soft, about 6 minutes. Add red pepper and cook, stirring occasionally, until vegetables are wilted, about 4-6 minutes.
  3. Add garlic and cook for 1 minute.
  4. Turn off heat and stir in tomatoes, basil, and thyme and season lightly with salt and pepper. Set aside to let cool.
  5. In a medium-sized bowl, beat eggs and half-and-half together. Add salt, pepper, grated gruyère, and crushed red pepper.
  6. Divide vegetable mixture between two pie crusts, then pour egg mixture over each. Crumble goat cheese over tops. Bake for 45 minutes, or until set and cheese begins to brown on top. Remove from oven and cool for 30 minutes before serving.
Serves 8-10.

Rusty Nail Recipe

Ingredients you need
  • 1 1/2 oz.Scotch
  • 1/2 oz.Drambuie
  • 1Lemon Twist
How to make a Rusty NailPour the Scotch and Drambuie into an old-fashioned glass almost filled with ice cubes. Stir well. Garnish with the lemon twist.

Hawaiian Margarita Recipe

Ingredients you need
  • 1 CupIce
  • 1 1/2 ozTequila
  • 1/2 ozTriple Sec
  • 2 oz (fresh or frozen)Strawberries
  • 2 oz (fresh or canned)Pineapple
  • dash ofSour Mix
How to make a Hawaiian MargaritaPour all ingredients int a blender and blend until smooth. Pour contents into a chilled margarita glass. Garnish with the strawberries and pineapple.

Mediterranean Chicken Vegetable Galette


Ingredients

bag (11.8 oz) Green Giant™ Seasoned Steamers™ frozen Mediterranean blend
1
cup ricotta cheese
1/4
cup grated Parmesan cheese
1
to 1 1/2 teaspoons grated lemon peel 
1
Pillsbury™ refrigerated pie crust, softened as directed on box 
2
cups cooked roasted chicken breast strips (9 oz) 
1
egg, beaten

Steps


  • 1Heat oven to 375°F. Spray large cookie sheet with Crisco® Original No-Stick Cooking Spray. Microwave frozen vegetables as directed on bag.
  • 2Meanwhile, in small bowl, mix ricotta cheese, 3 tablespoons of the Parmesan cheese, 1/2 to 1 teaspoon of the lemon peel, 1/2 teaspoon salt and 1/8 teaspoon pepper.
  • 3Unroll pie crust on cookie sheet. Spread cheese mixture over crust to within 1 1/4 inches of edge.
  • 4In large bowl, mix chicken strips and remaining 1/2 teaspoon lemon peel, 1/2 teaspoon salt and 1/8 teaspoon pepper. Add cooked vegetables; mix well. Spoon over cheese.
  • 5Fold edge of crust over filling, pleating crust as necessary. Brush crust edge with egg. Sprinkle crust edge and filling with remaining 1 tablespoon Parmesan cheese.
  • 6Bake 25 to 35 minutes or until crust is golden brown. Let stand 5 minutes.

KAHLUA HOT CHOCOLATE RECIPE - perfect for cold winter



Ingredients
  • 2 cups milk
  • 2 tablespoons sugar
  • 1 1/2 tablespoons Dutch-processed unsweetened cocoa powder
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 ounce Kahlúa coffee liqueur
  • Mini marshmallows, for serving
  • Salted caramel, for serving
  • Chocolate syrup, for serving
Instructions
  • In a medium saucepan, combine milk, sugar, cocoa powder, cinnamon and nutmeg over medium heat until heated through, about 2-3 minutes. Remove from heat and stir in Kahlúa.
  • Serve immediately, garnished with mini marshmallows, salted caramel and chocolate syrup, if desired.

Spiced Irish Coffee Recipe - cocktail for cold winter

Ingredients:
For the pumpkin spice whipped cream:
  • ½ cup heavy cream
  • 1½ teaspoons sugar
  • 1 teaspoon pumpkin spice
For the Irish coffee:
  • 1½ cups freshly brewed hot coffee
  • 1 tablespoon sugar
  • 4 tablespoons whiskey
Instructions:
For the pumpkin spice whipped cream:
  1. Whip all ingredients to stiff peaks.
For the Irish coffee:
  1. Divide all ingredients between two glasses.
  2. Pipe the whipped cream onto each drink.
  3. Sprinkle with pumpkin spice.
